Ingredients

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Prepare the apples: Peel, core, and dice the apples into small chunks. You want the pieces small enough to soften while cooking, but large enough to give each bite texture and fruitiness.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. These spices give the batter its warm, apple-fritter flavor.
  3. Whisk the wet ingredients: In a separate bowl, beat the eggs, then add the granulated sugar, brown sugar, milk, vanilla extract, and melted butter. Stir until smooth.
  4. Combine the batter: Pour the wet ingredients into the dry, and gently mix until just combined. Fold in the diced apples—don’t overmix or the batter can become dense.
  5. Cook the waffles: Heat your waffle maker and grease it lightly. Add about ⅓ to ½ cup of batter per waffle (depending on your machine) and cook until golden brown and crisp, about 4–5 minutes. Let cool slightly on a wire rack.
  6. Glaze them: Whisk together powdered sugar, milk, and vanilla to create a smooth glaze. Dip each waffle donut into the glaze or drizzle generously over the tops. Let the glaze set for a few minutes before serving.
