- 1 lb large raw shrimp, peeled and deveined
- ½ cup buttermilk
- ½ cup cornstarch
- ½ cup all-purpose flour
- ½ tsp paprika
- ½ tsp garlic powder
- ¼ tsp salt
- Oil for frying
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1–2 tbsp Sriracha (to taste)
- 1 tbsp honey
- Optional: Chopped green onions
- Optional: Sesame seeds
- Optional: Shredded lettuce or cabbage (for serving)
Instructions
- Marinate the Shrimp: Place peeled and deveined shrimp into a bowl with the buttermilk. Let them soak while you prepare the dredge. This tenderizes the shrimp and helps the coating stick.
- Prepare the Dredge: In a shallow bowl, whisk together cornstarch, flour, paprika, garlic powder, and salt. This mix gives the shrimp their signature crispy texture.
- Heat the Oil: Pour oil into a deep skillet or saucepan to a depth of about 1–1½ inches. Heat it over medium-high heat until it reaches 350°F. A thermometer helps here, but you can also test by dropping a bit of flour into the oil—if it sizzles, it’s ready.
- Dredge and Fry: Working in batches, remove shrimp from buttermilk, letting the excess drip off, then dredge them in the flour mixture. Press lightly to coat well. Carefully lower the shrimp into the hot oil and fry for about 2–3 minutes per side or until golden and crisp. Don’t overcrowd the pan.
- Drain and Cool: Use a slotted spoon to transfer the cooked shrimp to a plate lined with paper towels. Let them cool slightly while you make the sauce.
- Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and honey until smooth and creamy.
- Toss and Serve: Place the shrimp in a large bowl and drizzle with the bang bang sauce. Gently toss to coat. Serve over shredded lettuce or cabbage for a light crunch, and top with green onions or sesame seeds if desired.

- Adjust the spiciness of the sauce by varying the amount of Sriracha.
- This recipe can be made gluten-free by using a gluten-free all-purpose flour.
- For a lower fat version, consider baking the shrimp instead of frying.
