- 1 pound stew meat
- 4 cups broccoli florets
- 1/3 cup soy sauce
- 3 cloves garlic, minced
- 2 tablespoons brown sugar
- 2 tablespoons cornstarch
- 1 cup beef broth
- 1 teaspoon grated fresh ginger (optional)
- 1 teaspoon sesame oil
- 1 tablespoon vegetable oil (for searing)
- 2 tablespoons water (for slurry)
Instructions
- Heat vegetable oil in a large skillet or Dutch oven over medium-high heat. Sear stew meat in batches until browned on all sides.
- Lower the heat and add minced garlic, soy sauce, brown sugar, beef broth, sesame oil, and ginger (if using). Stir and let simmer for 2–3 minutes.
- Cover and simmer on low for 1 to 2 hours, stirring occasionally until the beef is fork-tender. Add more broth or water if needed.
- Add broccoli florets, cover, and cook for 5–7 minutes until just tender and vibrant green.
- Mix cornstarch and water to make a slurry. Stir into the pan and simmer until the sauce thickens.
- Serve hot over rice or noodles and enjoy.
