Description

Delicious homemade enchiladas filled with seasoned beef and topped with cheese.


Ingredients

  • lbs ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade seasoning)
  • ½ cup water
  • 1 can (16 oz) refried beans
  • 1012 corn or flour tortillas
  • 2 cups red enchilada sauce
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Sour cream
  • Optional: Chopped cilantro
  • Optional: Diced tomatoes
  • Optional: Sliced jalapeños

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Heat olive oil in a skillet. Cook ground beef with onion and garlic until browned. Drain excess fat.
  3. Stir in taco seasoning and water. Simmer 3–4 minutes.
  4. Add refried beans and mix until smooth and heated through.
  5. Spread ½ cup enchilada sauce in the bottom of a 9×13-inch baking dish.
  6. Fill each tortilla with beef mixture, roll tightly, and place seam-side down in the dish.
  7. Pour remaining enchilada sauce over the top and sprinkle with shredded cheese.
  8. Bake 20–25 minutes until bubbly and cheese is melted.
  9. Let rest 5 minutes before serving.

Notes

  • Consider letting the enchiladas rest longer for easier cutting.
  • Feel free to customize toppings based on preference.
