Description
Delicious homemade enchiladas filled with seasoned beef and topped with cheese.
Ingredients

- 1½ lbs ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade seasoning)
- ½ cup water
- 1 can (16 oz) refried beans
- 10–12 corn or flour tortillas
- 2 cups red enchilada sauce
- 2 cups shredded cheddar or Mexican blend cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: Sour cream
- Optional: Chopped cilantro
- Optional: Diced tomatoes
- Optional: Sliced jalapeños
Instructions
- Preheat oven to 190°C (375°F).
- Heat olive oil in a skillet. Cook ground beef with onion and garlic until browned. Drain excess fat.
- Stir in taco seasoning and water. Simmer 3–4 minutes.
- Add refried beans and mix until smooth and heated through.
- Spread ½ cup enchilada sauce in the bottom of a 9×13-inch baking dish.
- Fill each tortilla with beef mixture, roll tightly, and place seam-side down in the dish.
- Pour remaining enchilada sauce over the top and sprinkle with shredded cheese.
- Bake 20–25 minutes until bubbly and cheese is melted.
- Let rest 5 minutes before serving.
Notes
- Consider letting the enchiladas rest longer for easier cutting.
- Feel free to customize toppings based on preference.
