- 4 cloves garlic (freshly minced for best flavor)
- 1 large head roasted garlic (or pre-roasted from the store to save time)
- 2 tbsp extra virgin olive oil (I use Carapelli)
- 4 cups vegetable broth
- 1 tsp salt, divided
- 1 tbsp fresh chopped parsley
- 1/4 tsp freshly ground black pepper (freshly ground preferred)
- 4 large potatoes (peeled and cut into 1-inch chunks)

Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 3-4 minutes until softened and translucent, stirring occasionally to prevent browning.
- Add the fresh minced garlic to the pot and sauté for 30-60 seconds until fragrant. Don’t let it brown—you want that fresh garlic aroma without any bitter notes.
- Squeeze the roasted garlic cloves directly into the pot, mashing them gently with a wooden spoon to break them up. The sweet, caramelized paste will coat the onions beautifully.
- Pour in the vegetable broth and add the potato chunks along with half the salt and the black pepper. Bring the mixture to a boil, then reduce heat to maintain a gentle simmer.
- Cook for 20-25 minutes until the potatoes are completely tender and easily pierced with a fork.
- Remove from heat and blend using an immersion blender until completely smooth and creamy.
- Taste and adjust seasoning with the remaining salt, additional pepper, and fresh parsley.
- Serve immediately in bowls topped with your choice of garnishes—chopped parsley for freshness, croutons for crunch, or grated cheese for extra indulgence.
