Ingredients

  • 4 cloves garlic (freshly minced for best flavor)
  • 1 large head roasted garlic (or pre-roasted from the store to save time)
  • 2 tbsp extra virgin olive oil (I use Carapelli)
  • 4 cups vegetable broth
  • 1 tsp salt, divided
  • 1 tbsp fresh chopped parsley
  • 1/4 tsp freshly ground black pepper (freshly ground preferred)
  • 4 large potatoes (peeled and cut into 1-inch chunks)
  • for garnish (optional): chopped parsley, croutons, grated cheese

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 3-4 minutes until softened and translucent, stirring occasionally to prevent browning.
  2. Add the fresh minced garlic to the pot and sauté for 30-60 seconds until fragrant. Don’t let it brown—you want that fresh garlic aroma without any bitter notes.
  3. Squeeze the roasted garlic cloves directly into the pot, mashing them gently with a wooden spoon to break them up. The sweet, caramelized paste will coat the onions beautifully.
  4. Pour in the vegetable broth and add the potato chunks along with half the salt and the black pepper. Bring the mixture to a boil, then reduce heat to maintain a gentle simmer.
  5. Cook for 20-25 minutes until the potatoes are completely tender and easily pierced with a fork.
  6. Remove from heat and blend using an immersion blender until completely smooth and creamy.
  7. Taste and adjust seasoning with the remaining salt, additional pepper, and fresh parsley.
  8. Serve immediately in bowls topped with your choice of garnishes—chopped parsley for freshness, croutons for crunch, or grated cheese for extra indulgence.
