- 3–4 boneless, skinless chicken breasts (about 1 lbs)
- 2 tbsp Cajun seasoning
- 8 oz fettuccine or penne pasta
- 1 cup mixed bell peppers, chopped
- 1 cup heavy cream
- ½ cup BBQ sauce
- 2 green onions, sliced (for garnish)
- 2 tbsp olive oil
- 3 cloves garlic, minced
Instructions
- Heat olive oil in a large skillet over medium heat. Add seasoned chicken breasts and cook until golden brown (6-7 minutes per side).
- Once cooked through, add chopped bell peppers and minced garlic; sauté until peppers are tender-crisp (4-5 minutes).
- Pour in heavy cream and stir; let simmer for about 3-4 minutes until slightly thickened.
- Cook pasta according to package instructions until al dente, then drain and add to the skillet.
- Drizzle BBQ sauce over the pasta mixture and stir well to coat evenly. Cook on low heat for an additional minute.
- Serve hot, garnished with sliced green onions.

- For a lighter version, substitute heavy cream with half-and-half.
