Description

This baked gnocchi with cherry tomatoes, butter beans, and Boursin cheese offers a delicious and hearty dish perfect for any occasion.


Ingredients

  • 1 package (16 oz) cherry tomatoes
  • 1 package (16 oz) gnocchi
  • 1 can (15 oz) butter beans (drained)
  • 1 jar (24 oz) marinara sauce
  • 1 block (5 oz) Boursin cheese (garlic and fine herbs flavor)
  • 1 cup fresh chopped basil

Instructions

  1. Preheat oven to 400°F (204°C). Halve some of the cherry tomatoes and leave others whole.
  2. Into a large (9×13 inch or similar) casserole dish, dump the tomatoes, gnocchi, butter beans, marinara sauce, Boursin cheese, and chopped basil. Gently stir to combine (it’s okay if the cheese isn’t fully blended).
  3. Tightly cover with aluminum foil and bake for 15 minutes. Stir to mix everything up, then return to the oven uncovered for 10 to 15 more minutes. It’s finished when the gnocchi is fork-tender!
  4. Serve warm, topped with fresh basil and cracked black pepper.
