Mint Chocolate Brownies

Description

Delicious mint chocolate brownies topped with crushed candy canes, perfect for the holidays!


Ingredients

  • 1 box dark chocolate brownie mix (18 ounce)
  • 2 large eggs
  • ½ cup vegetable oil
  • ¼ cup heavy cream
  • ¾ cup mint fudge flavored baking chips
  • ⅔ cup crushed candy canes (divided)

Instructions

  1. Preheat the oven to 350°F. Line a 9×13 inch baking pan with parchment paper or spray it well with cooking spray.
  2. In a large mixing bowl, mix the brownie mix, eggs, vegetable oil and heavy cream until combined, about 1-2 minutes.
  3. Fold in the mint fudge flavored baking chips. Spread the batter evenly into the prepared baking pan.
  4. Sprinkle ⅓ cup of the crushed candy canes over the top. Gently swirl them into the batter with a butter knife.
  5. Bake for 25-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove from the oven and immediately top with the remaining crushed candy canes.
  7. Cool for at least 15 minutes before cutting and serving warm or cool.

Notes

  • For best results, use room temperature eggs.
  • These brownies are great served warm with ice cream!
