- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 2 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon fine sea salt
- 2 tablespoons milk, plus more as needed
- 2 cups powdered sugar
- 3 tablespoons milk for icing
- 1 teaspoon vanilla extract for icing
- 1 pinch fine sea salt for icing
- gel food coloring as needed
- 1/3 cup assorted holiday sprinkles
Instructions
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
- Beat in the egg, egg yolk, vanilla extract, and almond extract until smooth and well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt, then add the dry ingredients to the wet ingredients in two additions, mixing on low speed.
- Add the milk and mix just until the dough comes together and is soft but not sticky; if needed, sprinkle in a teaspoon or two of extra flour.
- Divide the dough into two discs, wrap each in plastic, and chill in the refrigerator for at least 1 hour or up to overnight.
- When ready to bake, preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- On a lightly floured surface, roll out one disc of dough at a time to about 1/4 inch thickness and cut into festive Christmas shapes with cookie cutters.
- Place the cut-out cookies on the prepared baking sheets, about 2 inches apart, and chill the tray in the fridge for 10 minutes to help the cookies hold their shape.
- Bake the cookies for 8 to 10 minutes, just until the edges look set and barely golden; let the icing set before stacking or storing.
Notes
- Store cookies in an airtight container for up to a week.
