Description

Delicious festive cookies perfect for the holiday season.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt
  • 2 tablespoons milk, plus more as needed
  • 2 cups powdered sugar
  • 3 tablespoons milk for icing
  • 1 teaspoon vanilla extract for icing
  • 1 pinch fine sea salt for icing
  • gel food coloring as needed
  • 1/3 cup assorted holiday sprinkles

Instructions

  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
  2. Beat in the egg, egg yolk, vanilla extract, and almond extract until smooth and well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt, then add the dry ingredients to the wet ingredients in two additions, mixing on low speed.
  4. Add the milk and mix just until the dough comes together and is soft but not sticky; if needed, sprinkle in a teaspoon or two of extra flour.
  5. Divide the dough into two discs, wrap each in plastic, and chill in the refrigerator for at least 1 hour or up to overnight.
  6. When ready to bake, preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  7. On a lightly floured surface, roll out one disc of dough at a time to about 1/4 inch thickness and cut into festive Christmas shapes with cookie cutters.
  8. Place the cut-out cookies on the prepared baking sheets, about 2 inches apart, and chill the tray in the fridge for 10 minutes to help the cookies hold their shape.
  9. Bake the cookies for 8 to 10 minutes, just until the edges look set and barely golden; let the icing set before stacking or storing.
