Ingredients

- 1 pound ground beef
- 16 oz Velveeta cheese, cubed
- 1 cup shredded cheddar cheese
- 1 can (10 oz) Rotel (diced tomatoes with green chiles)
- 1/2 cup black beans (optional)
- 1 tablespoon taco seasoning
- 1/4 cup milk or cream
- 1 small jalapeño, sliced
- 1/4 cup fresh diced tomatoes (for topping)
- 2 tablespoons chopped cilantro (for topping)
Instructions
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat if needed.
- Stir in taco seasoning and a splash of water. Simmer for 2–3 minutes.
- Add the Rotel and black beans. Stir and let it cook down slightly.
- Lower heat and stir in Velveeta cubes until fully melted.
- Add shredded cheddar and stir until smooth.
- Adjust the consistency by adding milk or cream as needed.
- Garnish with diced tomatoes, jalapeño slices, and cilantro.
- Serve immediately with tortilla chips or as a topping.
Notes
- This dip can be made ahead of time and reheated before serving.
