Ingredients

  • 1 pound ground beef
  • 16 oz Velveeta cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 can (10 oz) Rotel (diced tomatoes with green chiles)
  • 1/2 cup black beans (optional)
  • 1 tablespoon taco seasoning
  • 1/4 cup milk or cream
  • 1 small jalapeño, sliced
  • 1/4 cup fresh diced tomatoes (for topping)
  • 2 tablespoons chopped cilantro (for topping)

Instructions

  1. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat if needed.
  2. Stir in taco seasoning and a splash of water. Simmer for 2–3 minutes.
  3. Add the Rotel and black beans. Stir and let it cook down slightly.
  4. Lower heat and stir in Velveeta cubes until fully melted.
  5. Add shredded cheddar and stir until smooth.
  6. Adjust the consistency by adding milk or cream as needed.
  7. Garnish with diced tomatoes, jalapeño slices, and cilantro.
  8. Serve immediately with tortilla chips or as a topping.
