Description

Ingredients

  • 1 lb lean ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 (14 oz) can diced tomatoes
  • 1 cup chopped bell peppers (any color)
  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 (15 oz) can black beans, rinsed
  • 2 cups low-sodium chicken broth

Instructions

  1. Cook spaghetti al dente; set aside.
  2. In a skillet over medium heat, brown the ground meat until fully cooked; drain excess fat.
  3. Add onions and bell peppers to the skillet and sauté for 3-5 minutes until softened.
  4. Stir in taco seasoning and diced tomatoes; simmer briefly before transferring to the crockpot.
  5. Combine meat mixture with cooked spaghetti, black beans, chicken broth, and cheese in the crockpot; stir gently.
