- 8 oz spaghetti
- 1 lb lean ground beef or turkey
- 2 tbsp taco seasoning
- 1 (14 oz) can diced tomatoes
- 1 cup chopped bell peppers (any color)
- 1 medium onion, chopped
- 1 cup shredded cheddar cheese
- 1 (15 oz) can black beans, rinsed
- 2 cups low-sodium chicken broth
Instructions
- Cook spaghetti al dente; set aside.
- In a skillet over medium heat, brown the ground meat until fully cooked; drain excess fat.
- Add onions and bell peppers to the skillet and sauté for 3-5 minutes until softened.
- Stir in taco seasoning and diced tomatoes; simmer briefly before transferring to the crockpot.
- Combine meat mixture with cooked spaghetti, black beans, chicken broth, and cheese in the crockpot; stir gently.
- Cook on low for 4-6 hours or high for 2-3 hours until heated through.
