A healthy and flavorful riced cauliflower dish featuring slivered almonds and fresh herbs.
Ingredients

- 1 medium head cauliflower, riced
- 1/2 cup slivered almonds
- 1/2 cup fresh parsley or cilantro, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse the cauliflower under cold water, remove leaves and stem, then chop into florets.
- Rice the florets using a food processor or box grater until you achieve grain-like pieces.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Stir in the riced cauliflower, seasoning with salt and pepper. Cook for about 4 minutes until tender.
- Fold in sliced almonds and chopped herbs, mixing well to combine.
- Taste and adjust seasoning if necessary before serving.
Notes
- This dish can be served as a side or a light main dish.
- For a different flavor, try adding spices such as cumin or paprika.
