Description

A healthy and flavorful riced cauliflower dish featuring slivered almonds and fresh herbs.


Ingredients

  • 1 medium head cauliflower, riced
  • 1/2 cup slivered almonds
  • 1/2 cup fresh parsley or cilantro, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the cauliflower under cold water, remove leaves and stem, then chop into florets.
  2. Rice the florets using a food processor or box grater until you achieve grain-like pieces.
  3. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  4. Stir in the riced cauliflower, seasoning with salt and pepper. Cook for about 4 minutes until tender.
  5. Fold in sliced almonds and chopped herbs, mixing well to combine.
  6. Taste and adjust seasoning if necessary before serving.
