A fresh and delicious salad made with heirloom tomatoes, arugula, and a zesty lemon vinaigrette.
Ingredients

- 5 cups fresh arugula
- 2–3 large heirloom tomatoes, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves
- 1/4 cup shaved Parmesan cheese
- 1/4 cup extra virgin olive oil
- 3 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- 1 small garlic clove, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Salt and freshly ground black pepper to taste
Instructions
- In a small bowl or jar, whisk together all the lemon vinaigrette ingredients until well combined.
- Taste and adjust seasoning if needed. Set aside.
- In a large salad bowl, add the fresh arugula.
- Arrange the sliced heirloom tomatoes, cherry tomatoes, red onion, and basil leaves over the arugula.
- Drizzle the prepared lemon vinaigrette over the salad just before serving.
- Gently toss to combine, ensuring all ingredients are lightly coated with dressing.
- Top the salad with shaved Parmesan cheese.
- Season with additional salt and freshly ground black pepper if desired.
- Serve immediately and enjoy!

- This salad is best served fresh to enjoy the crispness of the arugula and the juiciness of the tomatoes.
