Ingredients

  • 1 pound carrots, peeled and cut into fry-sized sticks
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika (optional)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the carrot sticks with olive oil until evenly coated.
  3. In a small bowl, mix the Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Sprinkle the Parmesan mixture over the carrots and toss again until all pieces are well coated.
  5. Spread the carrots in a single layer on the prepared baking sheet, ensuring they are not touching.
  6. Roast for 20-25 minutes, flipping halfway through, until the carrots are tender and the edges are crispy and golden brown.
  7. Remove from the oven, garnish with fresh parsley, and serve immediately.
