Delicious crispy polenta fries, perfect for a snack or side dish.
Ingredients

- 2 cups instant polenta
- 4 cups water or vegetable broth
- 1 cup freshly grated Parmesan cheese
- 3 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon freshly cracked black pepper
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a medium pot, bring water or broth to a boil. Gradually whisk in polenta, stirring constantly until thickened (about 5 minutes).
- Remove from heat and stir in garlic powder, salt, pepper, and half of the Parmesan cheese. Let cool slightly.
- Spread the polenta mixture onto the prepared baking sheet into an even layer about half an inch thick. Refrigerate for at least one hour.
- Cut into fry shapes and rearrange on the baking sheet.
- Drizzle with olive oil and sprinkle remaining Parmesan over the top.
- Bake for 25–30 minutes, flipping halfway through until golden brown and crispy.
Notes
- For extra flavor, you can add herbs or spices to the polenta mixture.
- These fries are best served immediately but can be stored in an airtight container for up to 2 days.
