Description

Delicious crispy polenta fries, perfect for a snack or side dish.


Ingredients

Scale
  • 2 cups instant polenta
  • 4 cups water or vegetable broth
  • 1 cup freshly grated Parmesan cheese
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon freshly cracked black pepper

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a medium pot, bring water or broth to a boil. Gradually whisk in polenta, stirring constantly until thickened (about 5 minutes).
  3. Remove from heat and stir in garlic powder, salt, pepper, and half of the Parmesan cheese. Let cool slightly.
  4. Spread the polenta mixture onto the prepared baking sheet into an even layer about half an inch thick. Refrigerate for at least one hour.
  5. Cut into fry shapes and rearrange on the baking sheet.
  6. Drizzle with olive oil and sprinkle remaining Parmesan over the top.
  7. Bake for 25–30 minutes, flipping halfway through until golden brown and crispy.

Notes

  • For extra flavor, you can add herbs or spices to the polenta mixture.
  • These fries are best served immediately but can be stored in an airtight container for up to 2 days.
