Description

Deliciously moist coconut cake bars with a hint of pink color, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk (or coconut milk)
  • 1 tsp vanilla extract
  • 1 cup unsweetened coconut flakes
  • A few drops of pink food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream the softened butter until smooth. Add eggs one at a time, mixing well after each addition. Stir in milk and vanilla until combined.
  4. Gradually add the dry mixture to the wet mixture, folding gently. Mix in coconut flakes and pink food coloring until you achieve your desired color.
  5. Pour batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes until golden brown.
  6. Allow to cool completely before cutting into bars.
