Ingredients

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup whole milk (or coconut milk)
- 1 tsp vanilla extract
- 1 cup unsweetened coconut flakes
- A few drops of pink food coloring
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, cream the softened butter until smooth. Add eggs one at a time, mixing well after each addition. Stir in milk and vanilla until combined.
- Gradually add the dry mixture to the wet mixture, folding gently. Mix in coconut flakes and pink food coloring until you achieve your desired color.
- Pour batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes until golden brown.
- Allow to cool completely before cutting into bars.
Notes
- Feel free to use coconut milk for a richer coconut flavor.
- Store leftovers in an airtight container for up to 3 days.
