- 130g unsalted butter, room temperature
- 100g powdered sugar
- 2 eggs, room temperature
- 10g honey
- 100g cake flour
- 5g matcha powder
- 3g baking powder
- 30g heavy cream
Instructions
- Preheat your oven to 170°C (338°F). Line a loaf pan with parchment paper or lightly grease it with butter.
- Cream the unsalted butter with the powdered sugar until pale and fluffy, about 3–4 minutes with an electric mixer.
- Add the eggs one at a time, mixing well after each addition. Stir in the honey.
- Sift together the cake flour, matcha powder, and baking powder.
- Gently fold the dry ingredients into the wet mixture in batches, and then add the heavy cream, folding until smooth.
- Pour the batter into the prepared loaf pan and tap it gently on the counter to remove air bubbles. Bake for 35–40 minutes.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack. Once fully cooled, slice and serve.
