Description

These delicious puffy muffins are a great breakfast option that can be served with powdered sugar, fruit, or syrup.


Ingredients

Scale
  • 6 large eggs
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 6 teaspoons unsalted butter (1/2 teaspoon per muffin cup)

Instructions

  1. Preheat your oven to 400°F (200°C). Place 1/2 teaspoon of butter into each muffin cup and place the tin in the oven until butter melts and sizzles.
  2. In a blender, combine eggs, milk, flour, salt, and vanilla. Blend until smooth. Let the batter rest for 5 minutes.
  3. Remove the hot tin from the oven and quickly pour batter into each muffin cup, filling each halfway.
  4. Return muffin tin to oven and bake for 14–17 minutes until puffed and golden around the edges.
  5. Carefully remove pancakes from the tin and serve immediately with powdered sugar, fruit, or syrup.

Notes

  • For best results, make sure to let the batter rest before baking.
