- 1 pound boneless, skinless chicken breasts, cut into strips
- 8 ounces fresh mushrooms, sliced
- 1 large green bell pepper, sliced
- 1 large red bell pepper, sliced
- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- ¼ cup chicken broth
- 2 tablespoons soy sauce
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- ½ teaspoon dried thyme
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Season chicken strips with salt and black pepper in a mixing bowl.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes until browned; remove from skillet.
- In the same skillet, sauté sliced mushrooms and bell peppers for about 5 minutes until softened. Add garlic and thyme; cook for another minute.
- Return cooked chicken to the skillet, pour in chicken broth and soy sauce, stirring well. Simmer for 3-4 minutes until the sauce thickens slightly.
- Serve warm, garnished with chopped parsley.
