Description

Delicious and savory mushroom tacos made with mixed mushrooms and fresh ingredients.


Ingredients

  • 3 tablespoons olive oil
  • 1 pound mixed mushrooms (oyster, shiitake, cremini), sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon smoked paprika
  • 8 corn tortillas
  • 1 small white onion, finely diced
  • 0 cup fresh cilantro, chopped
  • 2 limes, cut into wedges

Instructions

  1. Clean and slice the mushrooms into thick strips.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add mushrooms to the skillet and let them sear undisturbed for 3–4 minutes.
  4. Stir occasionally and cook until golden brown.
  5. Add sliced onion, garlic, soy sauce, and smoked paprika.
  6. Cook for 5–6 minutes until onions are soft and mushrooms are well coated.
  7. Warm the corn tortillas on a skillet or over an open flame.
  8. Spoon the mushroom filling into the tortillas.
  9. Top with diced raw onion and chopped cilantro.
  10. Squeeze fresh lime juice over each taco and serve immediately.

  • For added flavor, consider marinating the mushrooms in soy sauce before cooking.
