- 3 tablespoons olive oil
- 1 pound mixed mushrooms (oyster, shiitake, cremini), sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce or tamari
- 1 teaspoon smoked paprika
- 8 corn tortillas
- 1 small white onion, finely diced
- 0 cup fresh cilantro, chopped
- 2 limes, cut into wedges
Instructions
- Clean and slice the mushrooms into thick strips.
- Heat olive oil in a large skillet over medium-high heat.
- Add mushrooms to the skillet and let them sear undisturbed for 3–4 minutes.
- Stir occasionally and cook until golden brown.
- Add sliced onion, garlic, soy sauce, and smoked paprika.
- Cook for 5–6 minutes until onions are soft and mushrooms are well coated.
- Warm the corn tortillas on a skillet or over an open flame.
- Spoon the mushroom filling into the tortillas.
- Top with diced raw onion and chopped cilantro.
- Squeeze fresh lime juice over each taco and serve immediately.
Notes
- For added flavor, consider marinating the mushrooms in soy sauce before cooking.
- These tacos can be served with additional toppings like avocado or hot sauce.
