Description
This refreshing frozen bark is a delicious treat made with vanilla Greek yogurt, pineapple, and coconut.
Ingredients

- 2 cups vanilla Greek yogurt
- 2 tbsp honey (or maple syrup)
- ½ tsp vanilla extract
- 1 cup diced pineapple (fresh)
- ¼ cup shredded coconut (toasted preferred)
Instructions
- Stir Greek yogurt, honey (or maple), and vanilla until smooth and creamy.
- Line a baking sheet with parchment. Spread the yogurt mixture into a thin, even layer (about ½ inch).
- Scatter pineapple evenly over the yogurt. Sprinkle coconut (and nuts if using).
- Freeze 3–4 hours, or until completely solid.
- Break into bark pieces. Enjoy immediately or store frozen.

- For added crunch, consider adding chopped nuts.
