Description

This refreshing frozen bark is a delicious treat made with vanilla Greek yogurt, pineapple, and coconut.


Ingredients

Scale
  • 2 cups vanilla Greek yogurt
  • 2 tbsp honey (or maple syrup)
  • ½ tsp vanilla extract
  • 1 cup diced pineapple (fresh)
  • ¼ cup shredded coconut (toasted preferred)

Instructions

  1. Stir Greek yogurt, honey (or maple), and vanilla until smooth and creamy.
  2. Line a baking sheet with parchment. Spread the yogurt mixture into a thin, even layer (about ½ inch).
  3. Scatter pineapple evenly over the yogurt. Sprinkle coconut (and nuts if using).
  4. Freeze 3–4 hours, or until completely solid.
  5. Break into bark pieces. Enjoy immediately or store frozen.
