Description

A delicious BBQ chicken and tater tot casserole that is easy to make and perfect for a crowd!


Ingredients

  • 1 pound cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 small red onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 bag (32 ounces) frozen tater tots
  • 1/4 cup sliced green onions (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded cooked chicken with BBQ sauce, making sure the chicken is well coated.
  3. Add the frozen corn and frozen peas to the bowl, mixing them evenly with the chicken and BBQ sauce.
  4. Stir in the diced red onion, garlic powder, onion powder, smoked paprika, salt, and pepper to the mixture. Ensure all ingredients are well combined.
  5. Grease a 9×13 inch baking dish with non-stick cooking spray.
  6. Spread the chicken and BBQ mixture evenly in the bottom of the prepared baking dish.
  7. Carefully arrange the frozen tater tots on top of the chicken mixture, covering it completely.
  8. Sprinkle the shredded cheddar cheese over the tater tots, making sure it is evenly distributed.
  9. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted and bubbly.
  10. Remove from the oven and allow to cool for about 5 minutes before serving.
  11. Garnish with freshly sliced green onions on top for added flavor and presentation.
