Ingredients

  • 3 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, peeled and diced
  • 2 stalks celery, chopped
  • 1 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • Salt and pepper to taste
  • Flour for dumplings
  • Baking powder for dumplings
  • Milk for dumplings
  • Butter, melted for dumplings
  • Parsley, optional for dumplings

Instructions

  1. Heat oil in a large pot over medium-high heat. Add the beef cubes, seasoning with salt and pepper. Brown the meat on all sides, about 5-7 minutes. Remove and set aside.
  2. In the same pot, add the chopped onion and garlic. Cook until softened, about 3 minutes.
  3. Pour in the beef broth. Stir in Worcestershire sauce, thyme, and bay leaf. Return the browned beef to the pot.
  4. Mix in the carrots, potatoes, and celery. Bring the pot to a simmer.
  5. Reduce the heat to low, cover, and let simmer for 2 to 2 hours. Stir occasionally to avoid sticking.
  6. In a bowl, mix flour, baking powder, salt, pepper, and parsley if using. Stir in milk and melted butter until just combined.
  7. After the stew has thickened, drop spoonfuls of dumpling batter over the surface of the stew.
  8. Cover the pot tightly and let the dumplings steam for 15-20 minutes without lifting the lid.
  9. Before serving, taste the stew and adjust seasoning as needed.
  10. Ladle the beef stew into bowls, ensuring to include dumplings in each serving.
