  • 1 can diced tomatoes, drained
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 tablespoons chopped parsley

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions until just al dente. Drain and set aside.
  2. Brown the Beef: Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened. Add the ground beef and cook until browned, breaking it apart as it cooks. Stir in the garlic, paprika, Italian seasoning, salt, and black pepper.
  3. Make the Creamy Sauce: Reduce the heat and stir in the cream of mushroom soup, milk, and diced tomatoes. Let the mixture simmer gently for a few minutes until creamy and well combined.
  4. Combine Everything: Add the cooked macaroni to the skillet and stir until fully coated in the creamy beef mixture. Fold in half of the cheddar cheese and half of the mozzarella cheese.
  5. Bake the Casserole: Transfer the mixture to a greased baking dish. Sprinkle the remaining cheese evenly over the top. Bake at 375°F for 20–25 minutes or until the cheese is melted, bubbly, and lightly golden. Finish with chopped parsley before serving.
