Description

A delicious stir-fry with chicken, zucchini, and bell peppers tossed in a savory sesame sauce.

Ingredients

Scale
  • 1 ½ pounds boneless skinless chicken breast, sliced
  • 2 medium zucchini, sliced into half-moons
  • 1 red bell pepper, sliced
  • 1 tablespoon olive oil
  • 2 tablespoons sesame oil
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • ¼ cup chicken broth
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together soy sauce, honey, cornstarch, chicken broth, black pepper, and red pepper flakes. This savory sauce thickens beautifully in the pan and coats every piece of chicken and zucchini with rich flavor.
  2. Cook the Chicken: Heat olive oil and sesame oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for about 5 to 6 minutes until golden and fully cooked. Remove the chicken from the skillet and set aside. The chicken develops a lightly caramelized exterior while staying tender inside.
  3. Sauté the Vegetables: In the same skillet, add garlic and ginger. Stir for about 30 seconds until fragrant. Add the zucchini and bell pepper. Cook for 3 to 4 minutes until the vegetables are slightly tender but still crisp. The zucchini softens just enough while keeping its fresh texture and vibrant color.
  4. Combine Everything: Return the chicken to the skillet and pour the prepared sauce over the mixture. Stir everything together and cook for another 2 to 3 minutes until the sauce thickens and coats the chicken and vegetables evenly.
  5. Garnish and Serve: Sprinkle with green onions and sesame seeds before serving. Serve hot over steamed rice, noodles, or cauliflower rice for a lighter option.

Notes

  • This dish pairs well with rice or noodles for a complete meal.
