Description

Delicious toffee coconut bars that are easy to make and perfect for a sweet treat.


Ingredients

  • 1 cup salted butter, melted
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups sweetened shredded coconut
  • 1 cup toffee bits
  • 1 can (14 ounces) sweetened condensed milk

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. In a bowl, mix melted butter and brown sugar. Stir in the egg and vanilla extract.
  3. Gradually add the flour and mix until a dough forms.
  4. Press the dough evenly into the prepared pan and bake for 15 minutes, until lightly golden.
  5. While baking, mix coconut, toffee bits, and sweetened condensed milk in a separate bowl.
  6. Spread the coconut mixture evenly over the baked crust.
  7. Bake again for 25 minutes, until the top is golden and edges are bubbling.
  8. Cool completely before slicing. For clean cuts, chill in the fridge for 30 minutes first.

Notes

  • For a richer flavor, use unsalted butter.
