Description

Ingredients

  • ½ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • 2 ½ cups Fruity Pebbles cereal, divided
  • 8 large marshmallows

Instructions

  1. Prepare the Oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream Butter and Sugar: Beat butter and sugar until light and fluffy.
  3. Add Wet Ingredients: Mix in egg and vanilla until just combined.
  4. Add Dry Ingredients: Mix flour, baking soda, and salt into dough on low speed.
  5. Fold in Cereal: Gently fold in 1½ cups Fruity Pebbles cereal.
  6. Stuff Marshmallows: Flatten dough, place marshmallow in center, and wrap dough fully around it.
  7. Coat and Bake: Roll dough balls in remaining cereal and bake 9–11 minutes.

Notes

  • Make sure the butter is softened for better mixing.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring to a wire rack.
