Delicious cookies filled with marshmallows and Fruity Pebbles cereal.
Ingredients

- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 ¾ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon fine sea salt
- 2 ½ cups Fruity Pebbles cereal, divided
- 8 large marshmallows
Instructions
- Prepare the Oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream Butter and Sugar: Beat butter and sugar until light and fluffy.
- Add Wet Ingredients: Mix in egg and vanilla until just combined.
- Add Dry Ingredients: Mix flour, baking soda, and salt into dough on low speed.
- Fold in Cereal: Gently fold in 1½ cups Fruity Pebbles cereal.
- Stuff Marshmallows: Flatten dough, place marshmallow in center, and wrap dough fully around it.
- Coat and Bake: Roll dough balls in remaining cereal and bake 9–11 minutes.
Notes
- Make sure the butter is softened for better mixing.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring to a wire rack.
