Description
A refreshing salad featuring fresh broccoli, carrots, and a creamy dressing.
Ingredients

- 2 cups fresh broccoli florets
- 1 cup shredded carrots
- 1/2 cup red onion, chopped
- 1/2 cup sunflower seeds
- 1/2 cup raisins
- 1/2 cup Greek yogurt
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- Salt and pepper to taste
Instructions
- Wash and thoroughly dry the broccoli florets and shred the carrots.
- Chop the red onion into small pieces.
- Optionally, toast the sunflower seeds in a skillet for 2-3 minutes.
- In a large bowl, combine the broccoli, carrots, red onion, sunflower seeds, and raisins.
- In a separate bowl, whisk together Greek yogurt, apple cider vinegar, honey, salt, and pepper until smooth.
- Pour the dressing over the salad and toss gently to combine.
- Taste and adjust seasoning, then chill in the refrigerator for at least 30 minutes before serving.
- Garnish and serve cold.
Notes
- This salad can be made a day in advance for more flavor.
- Feel free to add your favorite nuts or seeds for extra crunch.
