Description

A refreshing salad featuring fresh broccoli, carrots, and a creamy dressing.


Ingredients

Scale
  • 2 cups fresh broccoli florets
  • 1 cup shredded carrots
  • 1/2 cup red onion, chopped
  • 1/2 cup sunflower seeds
  • 1/2 cup raisins
  • 1/2 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • Salt and pepper to taste

Instructions

  1. Wash and thoroughly dry the broccoli florets and shred the carrots.
  2. Chop the red onion into small pieces.
  3. Optionally, toast the sunflower seeds in a skillet for 2-3 minutes.
  4. In a large bowl, combine the broccoli, carrots, red onion, sunflower seeds, and raisins.
  5. In a separate bowl, whisk together Greek yogurt, apple cider vinegar, honey, salt, and pepper until smooth.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Taste and adjust seasoning, then chill in the refrigerator for at least 30 minutes before serving.
  8. Garnish and serve cold.

Notes

  • This salad can be made a day in advance for more flavor.
  • Feel free to add your favorite nuts or seeds for extra crunch.
