Description
A delicious sandwich featuring sausage, sautéed peppers, and melted mozzarella cheese.
Ingredients

- 1 can cooking spray
- ½ cup mix of sliced red peppers and red onion
- ¼ cup banana peppers
- 2 tablespoons pesto sauce
- 1 large roll (sliced)
- ¼ cup shredded mozzarella cheese
- 1 Italian sausage (preferably sweet turkey sausage)
Instructions
- Spray a pan with cooking spray and cook peppers and onions over medium heat until the red peppers and onions soften and the mixture starts to brown.
- While the pepper/onion mixture is cooking, start cooking your sausage. For the sausage to fit well on the roll, cut it in half and spread it out in a pan. This also helps reduce the cooking time. Brown the sausage until no more pink remains and it is fully cooked. While this is cooking, preheat a broiler.
- Spread the pesto sauce on both sides of the sliced bun.
- Top with the cooked sausage and pile on the banana peppers, red peppers, and onions. Cover with ¼ cup of shredded mozzarella cheese and toast in a broiler or oven for 5-10 minutes until cheese melts and the bread starts to brown.
Notes
- Feel free to substitute the sausage with any other preferred type.
- This sandwich can be served with a side salad or fries for a complete meal.
