Description
Delicious beef enchiladas topped with a creamy cheddar cheese sauce.

- 1 lb ground beef
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp tomato paste
- 1 (4 oz) can diced green chiles
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 2 cups whole milk
- 1/2 cup sour cream (for garnish)
- 1/4 cup chopped fresh cilantro
- 1 red chili, sliced (optional for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, sauté diced onion in a bit of oil until softened. Add minced garlic and cook for 1 more minute.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in tomato paste, green chiles, chili powder, cumin, paprika, oregano, salt, and pepper. Simmer for 5 minutes to develop flavor.
- Spoon beef mixture into tortillas, roll them tightly, and place seam-side down in a greased 9×13-inch baking dish.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute.
- Slowly pour in milk while whisking, then simmer until slightly thickened.
- Add shredded cheddar and stir until melted into a smooth cheese sauce.
- Pour cheese sauce over enchiladas. Sprinkle more cheddar on top if desired.
- Bake uncovered for 20–25 minutes until bubbly and golden.
- Garnish with sour cream, cilantro, and sliced red chili. Serve warm.
