Description

A delicious creamy gnocchi dish made with sun-dried tomatoes and fresh basil.


Ingredients

  • 16 oz gnocchi
  • 1/3 cup sun-dried tomatoes, chopped
  • 4 tablespoons fresh basil, chopped and divided
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon dairy-free butter
  • 1 cup coconut milk
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat. Add the chopped onion and cook until softened.
  2. Stir in the garlic and cook for about one minute until fragrant.
  3. Add the sun-dried tomatoes and cook for another minute to release their flavor.
  4. Pour in the coconut milk and stir well. Season with smoked paprika, oregano, red pepper flakes, salt, and pepper. Let the sauce gently simmer for a few minutes.
  5. Add the gnocchi to the skillet and cook according to package instructions, stirring occasionally so the gnocchi become coated in the sauce.
  6. Stir in half of the chopped basil and cook for another minute.
  7. Serve warm and garnish with the remaining fresh basil.
