- 16 oz gnocchi
- 1/3 cup sun-dried tomatoes, chopped
- 4 tablespoons fresh basil, chopped and divided
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon dairy-free butter
- 1 cup coconut milk
- 1/2 teaspoon red pepper flakes
- 1 teaspoon smoked paprika
- 1/4 teaspoon oregano
- Salt and pepper to taste
Instructions
- Heat olive oil and butter in a large skillet over medium heat. Add the chopped onion and cook until softened.
- Stir in the garlic and cook for about one minute until fragrant.
- Add the sun-dried tomatoes and cook for another minute to release their flavor.
- Pour in the coconut milk and stir well. Season with smoked paprika, oregano, red pepper flakes, salt, and pepper. Let the sauce gently simmer for a few minutes.
- Add the gnocchi to the skillet and cook according to package instructions, stirring occasionally so the gnocchi become coated in the sauce.
- Stir in half of the chopped basil and cook for another minute.
- Serve warm and garnish with the remaining fresh basil.

- This dish is dairy-free and can be made vegan by ensuring all ingredients are plant-based.
