- 1 pound ground beef or turkey (Halal)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 package taco seasoning (check for Halal)
- 1 cup salsa (make sure it’s a Halal brand)
- 2 cups tortilla chips, crushed
- 1 cup shredded cheese (like cheddar or a Mexican blend)
- 1 cup sour cream (optional)
- 1/4 cup chopped green onions (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef or turkey until fully cooked (about 5-7 minutes). Drain any excess fat.
- Stir in black beans, corn, taco seasoning, and salsa into the skillet with the cooked meat. Mix well and let simmer for about 5 minutes.
- In a 9×13 inch baking dish, layer half of the crushed tortilla chips at the bottom.
- Pour the meat and bean mixture over the chips and top with shredded cheese.
- Bake for about 20 minutes or until the cheese is bubbly and slightly golden.
- Remove from the oven and top with sour cream and chopped green onions if desired. Serve hot.
