Description

Ingredients

  • 1/2 cup fresh raspberries
  • 12 fresh limes (for juice, plus extra for garnish)
  • 12 tablespoons simple syrup or granulated sugar
  • 3/4 to 1 cup sparkling water (or club soda/seltzer)

  • optional extra fruit (whole raspberries or lime wheel for garnish)

Instructions

  1. Start by gently washing about half a cup of fresh raspberries. If you’re using frozen, make sure they are fully thawed. Place them in a sturdy glass or a small mixing bowl.
  2. Using a muddler (or the back of a wooden spoon), gently press down on the raspberries. You want to break them down and release their juices and vibrant color, but avoid over-muddling to prevent bitter notes from the seeds.
  3. Squeeze the juice from one fresh lime directly over the muddled raspberries. Add about 1-2 tablespoons of simple syrup (or granulated sugar), adjusting to your preferred level of sweetness. Give it a gentle stir to combine.
  4. For a super smooth fizz without seeds, strain the raspberry-lime mixture. Place a fine-mesh sieve over your serving glass and pour the muddled mixture through it, pressing gently on the solids with the back of a spoon to extract all the delicious juice. Discard the remaining pulp and seeds.
  5. Fill your serving glass (or pitcher if making a batch) generously with ice.
  6. Slowly pour about 3/4 to 1 cup of chilled sparkling water over the ice and raspberry-lime mixture.
  7. Give your drink a gentle stir with a spoon to fully incorporate all the flavors. Garnish with a fresh lime wheel, a few whole raspberries, and a sprig of fresh mint. Serve immediately and enjoy.
