Description
Delicious smashed baby potatoes topped with a crispy layer of parmesan cheese.
Ingredients

- 1 1/2 pounds baby potatoes, rinsed (scrubbed if needed)
- 3 ounces finely grated parmesan cheese, plus more for topping if desired
- 1 1/2 teaspoons freshly ground black pepper, divided
- 2 tablespoons olive oil, divided
- 1/4 teaspoon kosher salt
- Nonstick cooking spray
Instructions
- Line a rimmed baking sheet with parchment paper. Spray the parchment with nonstick cooking spray.
- Place the potatoes in a large saucepan and cover with cool water by 1 inch. Bring to a boil over high heat. Adjust the heat to maintain a simmer. Cook until fork-tender, 10 to 15 minutes.
- While the potatoes cook, stir together the parmesan and 1 teaspoon of the pepper in a small bowl. Spread the cheese mixture into an even layer in the parchment-lined baking sheet.
- Drain the potatoes in a colander and return them to the saucepan. Shake over medium heat until the moisture has evaporated, about 15 to 30 seconds. Remove from heat, add 1 tablespoon olive oil, and toss to coat.
- Transfer the oiled potatoes to the baking sheet a few at a time, using a measuring cup to smash and flatten them over the cheese. Avoid breaking them into too many pieces. Continue until all potatoes are smashed.
- Drizzle any remaining oil over the potatoes, sprinkle with salt and remaining 1/2 teaspoon of pepper.
- Roast until the parmesan is melted and golden brown, 25 to 35 minutes, rotating the baking sheet halfway through.
- Let the baking sheet sit for 5 minutes to allow the parmesan to set. Optionally, flip some potatoes over to reveal the cheesy crust. Serve on the baking sheet or transfer to a platter with more grated parmesan as desired.
- Leftover potatoes can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, preheat the oven to 400°F. Line a baking sheet with parchment paper, arrange leftover potatoes cheese side down, and reheat for 5 to 10 minutes until hot. Let sit for 5 minutes before serving.

- To achieve extra crispiness, make sure to dry the potatoes thoroughly after boiling.
