Delicious stuffed salmon fillets with spinach and cream cheese.

- 2 (6 oz) salmon fillets
- 2 cups fresh spinach, chopped
- ½ cup cream cheese, softened
- ½ cup grated Parmesan cheese
- 2 tsp blackening seasoning
- 1 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper.
- In a bowl, mix chopped spinach, cream cheese, and Parmesan until creamy.
- Pat salmon dry and rub blackening seasoning generously on both sides.
- Create pockets in each fillet by slicing along the side and stuff them with the spinach mixture.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear each stuffed salmon for about 3 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 10 minutes or until the salmon flakes easily with a fork.
