Description

This delicious peach cobbler is perfect for summer and can be enjoyed warm, optionally with vanilla ice cream.


Ingredients

  • 4 cups fresh peaches (peeled and sliced)
  • 1 cup granulated sugar (divided)
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine sliced peaches, 1/2 cup sugar, lemon juice, cinnamon, and cornstarch. Toss to coat the peaches evenly.
  3. In another bowl, whisk together flour, remaining sugar, baking powder, and salt. Stir in milk and melted butter until just combined.
  4. Pour the peach mixture into a greased 9-inch baking dish. Spoon the batter over the peaches, spreading it evenly.
  5. Bake for 45 minutes or until the topping is golden brown.
  6. Allow to cool slightly before serving. Enjoy warm, optionally with vanilla ice cream.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a twist, add a pinch of nutmeg to the peach mixture.
